A weight loss plateau is not a sign that your body has "gotten used to" your diet in some vague, unfixable way. It is a predictable consequence of specific physiological adaptations that occur in response to sustained caloric restriction, and each of them has a targeted response.
Adaptation 1: Metabolic rate has decreased. As body weight drops, the caloric cost of maintaining that body drops with it. A person who weighed 200 pounds when they set their caloric target now weighs 180 pounds and requires fewer calories to maintain that weight.
