2 slices whole grain bread (toasted)
1 ripe avocado
2 eggs
Salt & pepper, to taste
Optional: chili flakes, lemon juice, or microgreens for garnish
1️⃣ Boil the eggs: Bring water to a boil, gently add eggs, and cook for 6½–7 minutes for a jammy center. Immediately transfer to ice water, peel and halve.
2️⃣ Toast the bread until golden and crisp.
3️⃣ Mash the avocado and season with salt, pepper, and lemon juice (optional).
4️⃣ Spread avocado on toast, top with halved eggs.
5️⃣ Sprinkle chili flakes or microgreens for extra flavor. Serve warm!
