Another quick breakfast that helps me start the day off right — simple, balanced, and so satisfying.
📝 Ingredients
2 eggs
2–3 tbsp grated cheese (cheddar, mozzarella, etc.)
½ cup cauliflower (fresh or defrosted, chopped small)
1 slice whole grain or sourdough toast
1 tsp butter
A pinch of sea salt
A handful of sweet cherry tomatoes
👩🍳 Instructions
Prepare the omelette:
Beat the eggs with a pinch of salt. In a pan, sauté cauliflower for 1–2 mins if fresh or just heat if defrosted.
