1 slice whole grain bread (toasted)
½ ripe avocado
2 eggs
1 tsp olive oil or butter
Salt & black pepper to taste
A handful of fresh blueberries
Optional: chili flakes or lemon juice for the avocado
1️⃣ Toast the bread until golden and crisp.
2️⃣ In a bowl, mash the avocado with a pinch of salt, pepper, and optional lemon juice or chili flakes. Spread over the toast.
