Honey is a natural and nutritious food that never expires. However, most honey on store shelves is pasteurized, which destroys its nutrients. Raw honey, on the other hand, contains enzymes, antioxidants, and beneficial sugars. Heating raw honey to 95 degrees Fahrenheit or below preserves its nutritional content, but higher temperatures degrade its properties.

Raw honey is rich in antioxidants, amino acids, and various nutrients, but these benefits are lost in pasteurized honey. To retain its health benefits, it is best to buy raw honey locally and avoid cooking with it.
