Crispy rice at the bottom of the pot is a sought-after delicacy, found in dishes like paella and Persian pilaf. Making crispy rice at home is easier than you might think. Start with cooked short-grained rice, seasoned with rice wine vinegar and sugar or cooked in white wine.
